Click on the Quote tab after opening the specific job.
Once you are in the Quote tab scroll down and click on + Add Task. Type in "Variation" and click the save icon
Once saved you can then click on "+ Add Sub-task" and this is where you'd place the quote variations, amounts and all other necessary information then click the save icon.
